“Origanum majorana” is from the oregano family, and has a delicate and sweet aroma.
Has antispasmodic, antioxidant, analgesic, decongestant and diuretic properties. Improves circulation and reduces muscle tension.
With a delicate flavour, the flowers and leaves can be used dry or fresh. It can be added at the end of cooking or when serving, to emphasize the freshness losed during cooking.
It is traditionally used in Alentejo in chicken pies.
It pairs perfectly with white meat, fish, peas, salads, beetroot and tomato sauces. It also goes well in sweets, in particular when combined with carrots. It must be crushed with sugar to release the essential oils, and thus help reduce the amount of sugar in recipes. See Recipes with Marjoram in our book Sal Verde.
